Blackberry Margarita
Who else hates wasting food? Well I do, and recently I noticed some blackberries that have residence in the back of my fridge, so I decided to put them to use. What better way to do so than making a cocktail with them? If you prefer your drinks on the sweeter end, preferably with a fruity taste, this drink will not disappoint! You can also adjust the levels of sweet and sour by playing with the ratios of sugar to lime juice.
A lot of us are not ready to travel yet, but this flavor-filled tropical drink makes me feel like I’m sipping on margaritas on the beaches of Oahu. It is the perfect refresher to beat the summer heat! Thank you to Erin from dinnerdishesanddesserts.com, where I initially found this recipe.
INGREDIENTS
1 ½ tablespoons granulated sugar
½ teaspoon kosher salt
1 lime
1 cup water
½ cup sugar
1 cup Blanco tequila
¾ cup Cointreau Citrus Triple Sec
⅔ cup fresh lime juice
12 oz. fresh blackberries
DIRECTIONS
Mix 1 ½ tablespoons of sugar and salt in a bowl.
Cut lime into 9 wedges. Rub rims of 8 glasses with one lime wedge and dip into the sugar-salt mixture
Mix ½ cup sugar and water and microwave for 2 ½ minutes. Stir and cool.
Blend the syrup, tequila, Cointreau, lime juice, and blackberries together in a blender until smooth
Use cheesecloth or strainer to separate and discard the solids
Garnish with lime wedges and serve over ice.

Cheesecake Dip with Strawberries
If you’re constantly craving a classic strawberry cheesecake like me, you must try this quick and easy twist to the dessert! I came across this recipe while looking for a dessert recipe using strawberries to bring to a picnic with my friends. The dip was a crowd pleaser and I received text messages from my friends the following day requesting the recipe! Of course I ended up making this again just for myself and ventured out by pairing the dip with different fruits. Personally, I think the cheesecake dip pairs well with mango or any berries, but if you’re feeling a little adventurous, do not hesitate to try it out with an assortment of fruits!

INGREDIENTS
8 oz. cream cheese
½ cup sour cream
½ cup confectioners sugar
2 tbsp. milk
½ tsp almond extract
½ tsp vanilla extract
2 pints fresh strawberries
½ cup graham cracker crumbs

DIRECTIONS
Whip cream cheese in a bowl until it has a smooth consistency.
Add sour cream, sugar, milk, almond extract and vanilla extract and mix until combined
Pour dip into a bowl to serve. Fill another bowl with the graham cracker crumbs
Dip strawberries into the cheesecake dip and then the crumbs.
